I have been looking for an ice-cream recipe that would still be creamy and tasty even though it would be dairy free and sugar free. I had tried one earlier with coconut milk and the consistency wasn’t good and didn’t taste the best. Then I came across one on Instagram that looked really good. They were using coconut yoghurt instead of coconut milk or cream and had honey as the sugar sweetener.
It looked like an easy recipe as well, as you didn’t need any ice cream maker which I didn’t have. I also thought of changing the honey to the allulose sweetener I had in the cupboard. This is because my tummy seems to be quite sensitive to sugar, so I normally look to substitute the sugar for allulose or lakanto sugar or syrup.
The Dairy-Free, Sugar-Free Ice Cream Recipe That Worked
The recipe was called “Pistachio Frozen Yoghurt” and looked really easy to make. enough to have it lectin free as well, so thought I’d give it a try.
Original recipe is from Danijella Badrak, who is a Nutritionist. Even though I have raw organic honey, I don’t have it often as my body reacts to the high sugar content still. So I switched this for the liquid Allulose I had in the cupboard which is a prebiotic natural sweetener that Dr Gundry highly recommends. The photo at the side is the only brand I have found that does liquid allulose, and that’s Wholesome and iHerb have it.
Ingredients
- 500g Coyo Organic Dairy Free Greek yoghurt
- 1 cup roasted and salted pistachios without the shell (I used Costco brand)
- 1/3 cup liquid Allulose (can get in Australia or USA from iHerb)
- 1 teaspoon cardamom powder
- 1 teaspoon vanilla essence
Method
- Mix everything in a bowl
- Transfer to blender and blend really well
- Pour into freezer safe container (I used glass)
- Freeze min 3 hours or overnight
I’m thinking we could also change up the flavours, so I might look at doing that in the future. Let me know if you’ve made this and what you think or if you’ve tried different flavours.
