Are you looking for an easy, healthy, gluten free lunch idea?
Well, this is one of my favourite go-to lunch ideas that is so easy and healthy:
- Cos lettuce
- Baby Spinach
- 1/2 avocado
- couple tablespoons of organic sauerkraut
- celtic or himalayan salt
- organic extra virgin olive oil
Put all ingredients on a plate and mix.
I like to use lots of the extra virgin olive oil as Dr Gundry recommends. You can add more lettuce or avocado if this isn’t filling enough. You could also add more ingredients to do a fuller salad, but that would just take more time. This only takes me about 5 minutes to make.
